The Best of Italy
WHY IS ITALIAN
GASTRONOMY SO appreciated
IN THE WORLD?
Strong values, unique know-how.
cultural and gastronomic
diversity
Italy is made up of 20 regions. These are all local specialities, reminding us that the country has long been under various foreign dominations. Its strength is that it has preserved its cultural and gastronomic diversity like no other country, thanks to its strong regional and local roots.
Italy has 262 PDOs and PGIs (the largest number of protected gastronomic products, according to the Origin Food website).
Italy has managed to preserve the quality of its products by keeping the family and regional dimension of its production. High quality products. They are synonymous with high quality, but also with ancestral know-how…
Thanks to this, biodiversity is preserved and good practices are safeguarded, thanks to many actors, such as the Slow Food movement, born in Italy in 1986 and known throughout the world, which lists all the varieties in danger of disappearing in order to promote them and thus save them.
Salami, Bresaola, Pancetta, Antipasti, Speck, Cheeses, Mortadella, Gorgonzola, Mascarpone, Minestrone, Risotto, Pantelleria Capers, Ligurian Anchovies, Umbria Olive Oil, Palagonia Oranges, Vesuvius Tomatoes … The Italian culinary specialities are numerous.
ALLEGRA invites you to taste, discover or rediscover all these Italian flavours and treasures which are part of the little joys of life!

Monograno Felicetti
1908 Predazzo - Trentino Alto Adige. Nature offers us two irreplaceable and invaluable elements: pure water and pure air, straight from the mountains, the Dolomites, (IN NORTHERN ITALY). We believe that such precious ingredients must be complemented by only the finest grains, chosen with a technical and empirical knowledge that over the years has become an art. Our flours - wholemeal and organic durum wheat, Kamut® Khorasan and spelt - must meet the strictest quality criteria and come ONLY from selected producers who share our values. For more than ONE hundred years we have been refining the meticulous processing and sophisticated combination of wheat that makes our pasta. The result is a product with exceptional taste and aroma and a perfectly balanced set of characteristics that make it irresistible to all pasta lovers: perfect cooking properties, complex texture and enough versatility to go well with any sauce.
Campisi
1845 Marzamemi - Siracusa Sicily. Linked to the sea for over a century, Salvatore Campisi produces and processes a wide range of fish products, from bluefin tuna, swordfish, ricciole, to the precious bottarga, mosciame (tuna ham) to the refining of the catch in pesti and paté. The use of ancient techniques, dating back to the Arab period. Refined over time in the small village of Marzamemi, these include the drying and maturing of tuna products, in a particularly suitable climatic band - making Salvatore Campisi, worthy of being considered one of the last connoisseurs of traditions. Campisi's motto is a guiding force : " Experience and care of the past - now threatened - deserving of protection and recognition".
Oils &
Balsamics
Il Borgo del Balsamico
Botteghe di Albinea - Reggio Emilia. Perhaps in deference to the Crotti family's history in the fashion industry, Il Borgo del Balsamico's packaging beautifully highlights its products. Original and aesthetically pleasing, the packaging clearly communicates the different types of products and their use. "Today, it is so important to give clear information to consumers. We are bombarded with information that does not inform. It is crucial that people are given the information they need to be able to choose. Being able to make choices means that you can evaluate and develop your critical ability," explains Cristina Crotti, who is also in charge of the company's product image. The colour code chosen by Il Borgo del Balsamico is yellow, orange and red for the balsamic condiments and aubergine for the Traditional Balsamic Vinegar with its three distinctive categories. Colours are a universal language that needs no translation. Balsamic Vinegar of Modena and Borgo del Balsamico Food Condiment are matured in French oak barrels, dating from the 18th and 19th centuries. The wooden casks gradually release their precious bouquets, helping us in the painstaking work of making superior products. Made only from the finest raw materials and presented with exquisite taste, the final product brings the echoes of an ancient tradition to your table.
frantoio d'orazio
In the region of Murgia, where Giangirolamo Acquaviva d'Aragona, the "Guercio of Puglia", left a sign of his passage, the elegant Conversano, lies in a corner of Puglia. That's where the history of the D'Orazio family begins. In the shadows of the Normans, the Swabians and the Angevins before them. For three generations now, like his uncle Peppino and his grandfather before him, Francesco has lived among the scent of the earth and the centuries-old olive trees, immersed in the magic of a world that governs the cycle of rural life. Peppino represents the past, with all its wealth of experience and tradition; Francesco represents the future, driven by the experience of his family, the desire for innovation and the passion for quality and beauty. Continuous research on raw materials, the enhancement of locally harvested olive varieties and the disguises inspired by local floor tiles have shaped a treasure chest preserving His Majesty the extra virgin olive oil.
Il Molino
Since 1700 Montefiascone - Viterbo, Lazio. Our company owes its name (which means "the mill") to a mill that stood where our olives now grow, fed by the water of the stream that still flows through the estate today. The business has been in Annalisa and Mauro Torzilli's family since the 1700s. Annalisa grew up watching her grandparents tend this fertile and bountiful land with unwavering love and respect. She and Mauro have been running the business for over 30 years, following the principles of organic farming. The surrounding landscape is a patchwork of flourishing orchards, olive and hazelnut trees, cereals and vegetables - carefully cultivated by practicing crop rotation to preserve the fertility and balance of the soil.
